Springhill Cheese
Spring Hill Cheese is owned by Larry Peter who, for the past twenty years, has owned a dairy in Two Rock Valley just west of Petaluma. About ten years ago, he started making cheese and very recently, he also purchased The Creamery in Petaluma. All their cheeses start with milk from their own, grass-fed Jersey cows. Milk is produced in far lesser quantities but is much richer in butterfat, proteins and nutrients. In addition, it is pasteurized at a high temperature to burn off lactose and then cooled quickly to preserve nutrients. Spring Hill produces about 25 varieties of cheeses including a white cheddar and an Old World Portuguese from the Azores.
