Marshall's Farms has been a regular vendor at the Grand Lake Farmers Market since its very onset. They offer honey in jars, combs and flavored straws with beeswax candles thrown in for good measure. Spencer Marshall has been seriously making honey for about 15 years. He and his wife, Helene, operate the Flying Bee Ranch in American Canyon where they have thirty tanks in which they process up to 100 different varieties of honey in the course of a year. They scrupulously separate each variety to preserve its unique flavor.

To cite just one example, the orange blossom honey comes from 500 hives that are trucked to Lindsay, (just below Fresno), when the oranges are in bloom. Other unique varieties include Jailbreak Honey derived from wildflowers in the hills surrounding San Quentin and Saints & Sinners which is a blend from Dominican College and San Quentin.

Marshall Farms honeys are all organic. The bees are not treated with pharmaceuticals. They are instead bred selectively to resist the viruses and mites that have plagued the bee population for some time.
