Big Paw
Tony Pennisi began bottling olive oils thirteen years ago thanks to a bit of serendipity.
While hiking with his dog in the hills above Saint Helena, he discovered a patch of wild sage. He gathered an armful, took it home and made a case of wild sage olive oil. Two bottles went to local chefs who soon demanded more and the rest is history.
Under his Big Paw label, Tony now offers a mind-boggling array of olives, olive oils, vinegars, balsamic wine vinegars, bread dippers and tapenades.
The olive oils are early and late harvest (flavored and unflavored) are pressed from olives Big Paw grows on three acres in St. Helena plus olives harvested from trees on estates and vineyards throughout the valley.
Big Paw produces their vinegars from grapes grown in the surrounding vineyards. Flavors include raspberry, strawberry and fig in different permutations. The balsamic vinegars come in an equally wide variety of flavors but are heavier and sweeter because the grapes are boiled prior to any other processing.
Big Paw has recently moved from their original home in St. Helena’s Folie a Deux Winery to a far larger space in Vacaville’s Mare Island where they will eventually have a sale’s room. Currently, their products are available only at Farmers Markets--nine during the off season and thirty during the peak of summer.
